// Why decorators choose it

Why isomalt beats
sugar for showpieces

01

It stays clear

Cooked isomalt sets to a water-clear glass with no yellowing, so sails, gems and windows look like glass rather than caramel. Sugar browns at the temperatures needed for hard work.

02

It resists humidity

Isomalt is far less hygroscopic than boiled sugar. Pieces stay dry and glossy for days in a typical Indian kitchen where sugar work turns sticky within hours.

03

It does not crystallise easily

Boiled sugar grains if it is stirred or seeded. Isomalt is forgiving: you can re-melt, re-pour and cast repeatedly without cloudiness.

04

Half the calories, low GI

Isomalt has about half the calories of sugar and a glycaemic index of 9, so decorations can be sold as sugar-free. Useful for diabetic-friendly and reduced-sugar cake ranges.

05

Casts, pulls and blows

The crystal grade works for every sugar-art technique: casting in silicone moulds, pulling ribbons and flowers, blowing spheres and spinning sugar.

06

Tooth-friendly and clean label

Isomalt is non-cariogenic and made from sugar beet sucrose. It is labelled as isomalt (E953 / INS 953) and approved for use in India by FSSAI.

// How to use it

Cooking isomalt
step by step

01

Dry method or wet method

For small batches, melt dry isomalt in a clean, dry stainless pan over medium heat. For larger or clearer pieces, add about 10% water by weight, bring to the boil and cook to temperature. The water method gives fewer bubbles.

02

Cook to 165 to 170 °C

Use a sugar thermometer. Isomalt melts at 145 to 150 °C and is poured for casting at around 165 to 170 °C. Do not stir once it is molten; swirl the pan instead.

03

Add colour late

Add gel or powder colours once the isomalt is off the heat and the bubbles have settled. Water-based liquid colours can cause spitting, so use sparingly.

04

Let the bubbles rise

Rest the pan for 30 to 60 seconds before pouring. The bubbles rise and the piece is glass-clear. For gems, pour into silicone moulds at a slightly lower temperature.

05

Pour onto silicone or a greased slab

Use silicone mats or moulds; isomalt does not stick to them. For sails, pour thin and shape over a curved surface while still pliable.

06

Store dry

Keep finished pieces in an airtight box with a food-safe desiccant. Store unused isomalt tightly closed, away from moisture. It keeps for 24 months.

07

Safety

Molten isomalt is far hotter than boiling water. Use heat-resistant gloves, keep a bowl of cold water nearby and keep children away from the stove.

// Questions buyers ask

Frequently asked

Where can I buy isomalt for cake decorating in India?

Directly from Isomalt India. Order 1 kg or 5 kg packs through the enquiry form or WhatsApp and they are couriered from our Ghaziabad warehouse to any pin code in India.

Which isomalt grade is used for sugar art?

The 30 mesh crystal grade, NT-ST-30. It melts clean, pours clear and is the grade confectionery factories use for hard candy and showpieces.

How do I make isomalt sugar glass?

Melt isomalt with about 10% water, cook to 165 to 170 °C without stirring, let the bubbles rise, add colour, then pour onto a silicone mat or into moulds. Store the set pieces in an airtight box.

Is isomalt safe to eat on a cake?

Yes. Isomalt is a food-approved sugar alcohol (E953 / INS 953) permitted by FSSAI. It is sugar-free, tooth-friendly and has half the calories of sugar. Like all polyols, very large amounts can have a laxative effect.

Can I re-melt leftover isomalt?

Yes. Unlike boiled sugar, isomalt can be re-melted and poured again without crystallising. Keep offcuts dry in a sealed container.
