Sugar-free that survives humidity
From frozen desserts to monsoon-proof confectionery. Formulating with a non-hygroscopic base.
Most sugar-free failures in India are not about taste. They are about July. Products that tested well in a dry lab go sticky, cloudy or soft on the shelf when relative humidity crosses 80%. The culprit is usually the bulk sweetener, and the fix is choosing one that does not want water in the first place.
Hygroscopicity, ranked
Sugar alcohols vary widely in how eagerly they absorb moisture. Sorbitol and xylitol start picking up water at 70 to 75% RH. Maltitol is somewhat better. Isomalt stays dry until about 85% RH and even then absorbs slowly. In practice that means isomalt-based products hold in ambient Indian conditions where sorbitol-based products need barrier packaging and desiccants.
Hard candy and coatings
A hard candy is a glass, and a glass with surface moisture goes tacky, then sticks to the wrap, then clouds. Isomalt candy at 1% residual moisture stays glassy at 65% RH without a twist wrap upgrade. For coated products such as dragées and cereal clusters, an isomalt shell keeps its crunch where a sucrose shell softens.
Build for July. If it holds in the monsoon, it holds everywhere else.
Frozen desserts
Humidity shows up in ice cream as ice crystal growth and surface frost through the freeze-thaw of distribution. Isomalt depresses freezing point less than sucrose, giving a firmer scoop and better heat-shock resistance. Blend with a small share of erythritol or glycerol to dial scoopability without giving up stability.
Gummies, bars and tablets
Gummies sweat when their sweetener pulls water from the air. Effervescent tablets pre-react. Protein bars go soft. In each case replacing the hygroscopic sweetener with isomalt lowers water uptake and pushes the failure point past the humidity your supply chain actually sees.
Design for the worst month
Test finished product at 30 °C and 80% RH for two weeks, not at 25 °C and 60%. Keep total polyol below 40% in soft formats, dry blend under 30% RH for effervescents, and let isomalt do the structural work. Choose packaging for the product, not to compensate for the sweetener.
Key takeaways
- 01Isomalt stays dry until about 85% RH; sorbitol and xylitol start absorbing at 70 to 75%.
- 02Hard candy at 1% moisture holds glassy at 65% RH with no wrap upgrade.
- 03Firmer scoop and better heat-shock resistance in frozen desserts.
- 04Test at 30 °C / 80% RH. Build for July, not for the lab.
